Fresh, dried, sautéed, pickled, or steamed shiitake mushrooms are used in multiple ways by the culinary world. Today they are found growing globally, and this has made them go from a luxury to more of a normal food product.

Much research has been targeted towards understanding the medicinal properties of this well-known delicacy. Initially it was found to help people who have had treatments and surgery for colorectal or stomach cancer, but the benefits go far from that.
